I'm running a horror game, and I want to do it based on locations. The sorority will have one of two names (either Beta Chi Nu or Sigma Epsilon Chi) depending on the answer to this question: Is it possible to do a Sigma in a thread title?

Unicode Σ = Σ seems to work.

All the other ones you mention are covered by standard latin characters B X N E ... which I guess you knew already if you're only after the Sigma. <grins>

I googled "unicode captial <name of greek letter in words>" which led me to www.fileformat.info which has a variety of HMTL Entity encodings.  Oddly I couldn't get the HTML Entity (named) version of Epsilon to work, but the HTML Entity (decimal) did ... though Epsilon is E anyway.

Interestingly, I found about 6-7 such sites I bookmarked for it (which surprisingly don't have all the entities I want) and was more wondering about whether or not the site would bork it. I found out a black box I was using for the end of /tt computer readout type posts wouldn't display right on a tablet... back when I was still using one.

Nope, the site doesn't bork it.  Just tried it out, and it works fine, at least for Σ.
